CHEF/OWNERCHEF FABIAN R. BANTONChef Fabian R. Banton was mentored by Top Chef Season 6 contestant Ron Duprat. After two and half years, he was promoted to Sous Chef. Fabian worked at different high-end restaurants for the next 10 years. The last chef he worked for was Brandon Taylor, Lebron James private chef, for 8 years. In 2017, he decided to take his talents from South Beach to the Big D and start Paramount Fresh.

THE OTHER GUYSHANNON BRANCHShannon Branch attended the University of Oklahoma before moving to Dallas in 1998 to follow his passion for the restaurant business. When Shannon started in the restaurant business 25 years ago, his goal was to open his own restaurant in which he has achieved multiple times. Opening Dallas staples such as Nick & Sam's and Truluck's to world-renowned hotels as Hotel Zaza and The Ritz-Carlton helped lead to his success. Working in these venues gave him the opportunity to work with the area's top chefs including Dean Fearing, Stephen Pyles, Avner Samuel and Graham Dodds among others.
